The right machine is not simply the one with the highest daily production number. Start With Daily Ice Demand

Most ice machine capacity is measured in pounds produced per 24 hours. That is a useful starting point, but it is not your final buying number. A full-service restaurant commonly needs about 1.5 pounds of ice per customer served.
